What do I eat? What can I have that’s nice and doesn’t take forever to cook? Why didn’t I meal prep like I said I would? Do I have enough strength to wait for Swiggy?

These are some questions I am sure we’ve all asked ourselves after coming home from work, too tired to even think about making a full-course, healthy meal. 

But ordering food everyday isn’t really an option-not for our wallets, not for our health, and definitely not for our long-term sanity. It’s neither sustainable nor practical, especially when all you crave is something simple, comforting, and not soaked in oil or guilt.

So, after watching too making instagram reels and youtube videos, I’ve settled on some really easy 15-20 min recipes that I can make when I come back exhausted from work. They are quick, healthy and best of all, they don’t require any fancy ingredients.

I’ll share one of them with you today-

Paneer Wrap (My Favourite No-Fuss Dinner)

A quick, delicious, and healthy wrap that’s ready in under 20 minutes using simple ingredients you probably already have at home.

Ingredients

  • Paneer – cubes or grated
  • Vegetables – choose 2-4 (I usually use capsicum, tomato, carrot and beetroot)
  • 2 rotis or tortillas – regular fulka, maida roti, puri, or whatever’s available
  • Spices – salt, black pepper, red chilli powder, turmeric (haldi), chilli flakes, oregano
  • Ketchup
  • Chilli sauce of choice – schezwan sauce, chilli oil, or whatever you have
  • Dhaniya chutney or green chilli sauce (optional)
  • Olive Oil – for sautéing (you can use any oil you have available at home)

Instructions

Step 1: Make the Paneer Filling

  • Dice capsicum and tomate into small pieces.
  • Heat some oil in a pan. Add red chilli powder and a pinch of haldi.
  • Once the oil is hot, add the diced vegetables and cook for 3–4 minutes until softened.
  • Add salt, black pepper, ketchup, and your preferred chilli sauce. Mix well.
  • Add grated or cubed paneer. Sauté everything together for 2 minutes, then transfer to a bowl.
    (Note: I don’t measure spices — it’s all by intuition. Adjust to your taste.)

Step 2: Sauté the Remaining Vegetables

  1. Cut the rest of your vegetables (like bell pepper, carrots or beetroot) into thin, long strips.
  2. In the same pan, heat a bit more oil. Add chilli flakes and oregano.
  3. Once hot, add in the sliced vegetables and sauté for 2 minutes.
  4. Season with salt and black pepper, sauté for 2 more minutes, then remove from heat.

Step 3: Prepare the Base

  • Heat or prepare 2 rotis or tortillas. You can use any type you have — regular fulka, maida roti, puri, etc.

Step 4: Assemble the Wraps

  1. Lay one roti flat on a plate.
  2. Spread a layer of chutney, ketchup, or green chilli sauce.
  3. Add a spoonful of the paneer filling in the center.
  4. Top with the sautéed vegetables.
  5. Roll it up like a wrap — and you’re done!

And that’s it — a no-hassle, quick, and comforting dinner ready in minutes.
